Ingredients

For the vanilla cream

    • milk 30 cl (1 ¼ Cups)

    • 1 vanilla bean

    • 3 egg yolks

    • sugar 75 gr (1/3  Cup)

For the "Island"

    • 3 egg whites
    • 1 lemon
    • sugar 25 gr (2 Tbsp)

 

Directions

    • Step 1 : make the vanilla cream -> recipe here
    • Step 2
    • In a bowl, beat egg whites with a mixer until they form peaks. Add sugar and lemon. Beat mixture until firm

    • Step 3
    • Boil water. With a big spoon, put several spoons full of the egg white mixture into the boiling water until you notice them expanding.Turn them over gently in the boiling water and wait until they expand slightly.

      Turn over and wait for expansion

    • Step 4
    • Serve in individual dishes on top of the vanilla cream. Store vanilla cream and islands in a covered container in the refrigerator.
