INGREDIENTS

For the vanilla cream

    • milk 30 cl

    • 1 vanilla bean

    • 3 egg yolks

    • sugar 75 gr

For the "Island"

    • 3 egg white
    • 1 lemon
    • sugar 25 gr

 

DIRECTIONS

    • Step 1 : make the vanilla cream -> recipe here
    • Step 2
    • In a bowl, beat egg white strongly. Add sugar and lemon. Beat until the egg white becomes firm

    • Boil water. With a big spoon, but the egg white in the boiling water until you can notice a small expansion. Return it and wait again until slight expansion.
